Ingredients

  • 2 cups diced peaches
  • 1 cup diced tomatoes
  • ¼ cup chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 loaf baguette, sliced
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your grill or grill pan over medium-high heat.
  2. 2. In a mixing bowl, combine the peaches, tomatoes, red onion, cilantro, lime juice, and olive oil. Season with salt and pepper to taste.
  3. 3. Grill the baguette slices for about 2 minutes on each side, until they are toasted and have grill marks.
  4. 4. Top each slice of grilled baguette with a spoonful of the peach salsa mixture.
  5. 5. Serve immediately and enjoy!
