- 4 ripe peaches, sliced
- 0.25 cup fresh mint leaves, chopped
- 0.25 cup shelled pistachios, chopped
- 2 tablespoon olive oil
- 1 tablespoon honey
- 1 lemon, juiced
- Salt and pepper to taste
In a large bowl, combine the sliced peaches, chopped mint, and pistachios.
In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper.
Pour the dressing over the peach mixture and toss gently to combine.
Serve immediately or chill for 30 minutes before serving.
