In a mixing bowl, combine diced peaches, sugar, cornstarch, and lemon juice. Set aside.
In another bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing just until dough comes together.
Roll out dough on a floured surface. Cut into circles using a cookie cutter.
Place a spoonful of peach filling in the center of each dough circle. Fold over and crimp edges to seal.
Brush each hand pie with egg wash. Place on a baking sheet.
Bake for 25 minutes or until golden brown. Let cool before serving.
