Peach Galette
A rustic, free-form peach tart that's easy to make and delicious.

- 1 sheet Pie crust store-bought or homemade
- 4 cups Peaches sliced
- ¼ cup Sugar
- 1 tablespoon Cornstarch
- 1 teaspoon Vanilla extract
- 1 tablespoon Lemon juice freshly squeezed
- 1 tablespoon Butter cut into small pieces
- 1 tablespoon Milk for brushing
- 1 tablespoon Coarse sugar for sprinkling
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine sliced peaches, sugar, cornstarch, vanilla extract, and lemon juice. Toss to coat.
Roll out the pie crust on the prepared baking sheet. Arrange the peach mixture in the center, leaving a 2-inch border.
Fold the edges of the crust over the peaches, pleating as necessary. Dot the peaches with butter pieces.
Brush the crust with milk and sprinkle with coarse sugar.
Bake for 40 minutes or until the crust is golden and the peaches are tender. Let cool before serving.
