Main Ingredients
- 2 cups pea tendrils
- ½ cup pistachios shelled
- ½ cup Parmesan cheese grated
- 1 clove garlic minced
- ½ cup olive oil
- 1 tablespoon lemon juice freshly squeezed
- ½ teaspoon salt
- ¼ teaspoon black pepper freshly ground
1. Combine pea tendrils, pistachios, Parmesan, and garlic in a food processor.
2. Pulse until finely chopped.
3. With the processor running, slowly add olive oil until well combined.
4. Add lemon juice, salt, and pepper. Pulse to combine.
5. Taste and adjust seasoning if necessary.
