Ingredients

  • 1 cup peas fresh or frozen
  • ¼ cup Parmesan cheese grated
  • ¼ cup pine nuts toasted
  • 1 clove garlic minced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
  • 1 baguette baguette sliced

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Place baguette slices on a baking sheet and toast in the oven for 5-7 minutes until golden brown.
  3. In a food processor, combine peas, Parmesan cheese, pine nuts, garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth.
  4. Spread the pea pesto onto the toasted baguette slices.
  5. Serve immediately and enjoy!
