Ingredients 

Main Ingredients

  • 200 g Pasta any short pasta
  • 150 g Frozen peas
  • 1 can Chickpeas drained and rinsed
  • 1 Red bell pepper diced
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper freshly ground
  • ¼ cup Fresh parsley chopped

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. In the same pot, blanch the frozen peas for 2 minutes. Drain and set aside.
  3. 3. In a large mixing bowl, combine the cooked pasta, blanched peas, chickpeas, and diced red bell pepper.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the pasta mixture and toss to combine.
  6. 6. Garnish with chopped fresh parsley before serving.
