Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 12 oz Pasta any type
  • ½ cup Sun-Dried Tomatoes chopped
  • ½ cup Feta Cheese crumbled
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the cauliflower in the preheated oven for 25-30 minutes, until golden and tender.
  4. While the cauliflower is roasting, cook the pasta according to the package instructions. Drain and set aside.
  5. In a large mixing bowl, combine the cooked pasta, roasted cauliflower, sun-dried tomatoes, feta cheese, and fresh parsley. Toss well to combine.
  6. Serve warm and enjoy!
