- 1 head Cauliflower cut into florets
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 12 oz Pasta any type
- ½ cup Sun-Dried Tomatoes chopped
- ½ cup Feta Cheese crumbled
- ¼ cup Fresh Parsley chopped
Preheat your oven to 425°F (220°C).
Toss the cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet.
Roast the cauliflower in the preheated oven for 25-30 minutes, until golden and tender.
While the cauliflower is roasting, cook the pasta according to the package instructions. Drain and set aside.
In a large mixing bowl, combine the cooked pasta, roasted cauliflower, sun-dried tomatoes, feta cheese, and fresh parsley. Toss well to combine.
Serve warm and enjoy!
