Crust
- 1.5 cups Graham cracker crumbs
- 0.5 cups Melted butter
Filling
- 24 oz Cream cheese softened
- 1 cup Granulated sugar
- 3 units Large eggs
- 1 teaspoon Vanilla extract
- 0.5 cup Passion fruit pulp
Topping
- 0.5 cup Passion fruit pulp
- 2 tablespoon Sugar
- 1 tablespoon Cornstarch mixed with 2 tablespoon water
Preheat your oven to 325°F (160°C).
Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla extract and passion fruit pulp.
Pour filling over the crust. Bake for 60 minutes or until the center is set.
For the topping, heat passion fruit pulp and sugar in a saucepan. Add cornstarch mixture and cook until thickened.
Let the cheesecake cool, then spread the topping over it. Chill in the fridge for at least 4 hours before serving.
