  • 2 large parsnips peeled and chopped
  • 3 large carrots peeled and chopped
  • 2 tablespoons butter

Instructions

  2. 2. Boil the parsnips and carrots in a pot of salted water until tender, about 20 minutes.
  3. 3. Drain the vegetables and return them to the pot.
  4. 4. Add the butter, salt, and pepper. Mash until smooth.
