Main Ingredients
- 2 cups parsnips, peeled and chopped
- 1 cup apple, peeled and chopped
- 1 cup onion, chopped
- 2 cups vegetable broth
- 1 cup water
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and cook until translucent.
3. Add parsnips and apple, cook for another 5 minutes.
4. Pour in vegetable broth and water, bring to a boil.
5. Reduce heat and simmer for 20 minutes, until parsnips are tender.
6. Blend the soup until smooth, season with salt and pepper.
