- 2 large zucchini cut into fries
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 large eggs beaten
- to taste salt and pepper
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a bowl, mix together the Parmesan, breadcrumbs, garlic powder, and Italian seasoning.
In another bowl, beat the eggs.
Dip each zucchini fry into the beaten eggs, then coat with the Parmesan mixture. Place on the prepared baking sheet.
Bake for 20 minutes, or until golden and crispy. Season with salt and pepper to taste.
