  • 1 cup polenta
  • 4 cups water
  • 1 cup Parmesan cheese, grated
  • 2 tablespoon butter
  • 1 lb mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Bring water to a boil in a saucepan. Slowly whisk in polenta.
  2. Reduce heat to low and cook, stirring frequently, until thickened, about 30 minutes.
  3. Stir in Parmesan cheese and butter. Season with salt and pepper.
  4. In a skillet, heat olive oil over medium heat. Add mushrooms and garlic, cooking until mushrooms are tender.
  5. Serve polenta topped with mushrooms. Enjoy!
