1. Pat the salmon fillets dry with paper towels. Season both sides with salt and freshly ground black pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes, until the skin is crispy and the salmon is mostly cooked through.
4. Flip the salmon and cook for another 2-3 minutes, until the salmon is cooked through and flakes easily with a fork.
