Ingredients

  • 1 lb oyster mushrooms sliced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add diced onion and minced garlic. Sauté until softened.
  3. 3. Add sliced oyster mushrooms and cook for about 5 minutes.
  4. 4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. 5. Stir in heavy cream and season with salt and black pepper to taste. Simmer for another 5 minutes.
  6. 6. Serve hot and enjoy!
