Ingredients

  • 2 cups Oyster mushrooms cleaned and trimmed
  • 1 cup All-purpose flour
  • 1 cup Cornmeal
  • 1 teaspoon Cajun seasoning
  • 1 cup Buttermilk
  • 4 French rolls split and toasted
  • 1 cup Shredded lettuce
  • 1 cup Sliced tomatoes
  • 1 cup Pickles sliced
  • 1 cup Mayonnaise

Instructions 

  1. 1. In a mixing bowl, whisk together the flour, cornmeal, and Cajun seasoning.
  2. 2. Dip the oyster mushrooms in buttermilk, then dredge in the flour mixture.
  3. 3. Heat oil in a frying pan over medium heat. Fry the mushrooms until golden brown and crispy.
  4. 4. Drain the mushrooms on paper towels.
  5. 5. Assemble the sandwiches by spreading mayonnaise on the rolls, then adding lettuce, tomatoes, pickles, and fried mushrooms.
