Main Ingredients
- 2 Eggplants medium-sized
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper freshly ground
- 1 teaspoon Garlic Powder
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Cut the eggplants into ½-inch thick slices.
Arrange the eggplant slices on the baking sheet.
Brush both sides of the eggplant slices with olive oil.
Sprinkle with salt, black pepper, and garlic powder.
Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and tender.
Serve warm.
