Ingredients 

Main Ingredients

  • 1 cup orzo
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions 

  1. Cook orzo in vegetable broth according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, cook until softened.
  3. Add zucchini and cook for another 5 minutes.
  4. Stir in cherry tomatoes and cooked orzo. Cook until heated through.
  5. Remove from heat and stir in feta cheese. Season with salt and pepper.
  6. Garnish with fresh parsley if desired.
