Instructions
1. Preheat your oven to 375°F (190°C).
2. In a mixing bowl, toss the sliced onions with olive oil, salt, and pepper.
3. Roll out the puff pastry and cut into small circles to fit your tartlet molds.
4. Place the pastry circles into the tartlet molds and fill with the onion mixture.
5. Sprinkle grated Gruyere cheese and chopped thyme over the top.
6. Bake in the preheated oven for 20-25 minutes, until golden brown.
7. Serve warm and enjoy!
