- 4 large onions thinly sliced
- 4 cups beef broth
- 2 tablespoon butter
- 1 cup white wine optional
- 1 teaspoon sugar
- 1 teaspoon salt to taste
- 1 teaspoon black pepper to taste
- 4 slices French bread toasted
- 1 cup grated Gruyere cheese
1. Melt the butter in a large pot over medium heat.
2. Add the sliced onions and cook until caramelized, about 25 minutes.
3. Stir in the sugar and cook for another 5 minutes.
4. Pour in the white wine and let it simmer until reduced by half.
5. Add the beef broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
6. Preheat the broiler. Ladle the soup into oven-safe bowls, place a slice of toasted French bread on top of each, and sprinkle with grated Gruyere cheese.
7. Broil until the cheese is melted and bubbly. Serve hot.
