  • 1 sheet Puff Pastry thawed
  • 2 large Onions thinly sliced
  • 2 tablespoon Olive Oil
  • 4 oz Goat Cheese crumbled
  • 1 teaspoon Thyme fresh, chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and cook until caramelized, about 20 minutes.
  3. Roll out the puff pastry on a floured surface and fit it into a tart pan. Prick the bottom with a fork.
  4. Spread the caramelized onions over the pastry. Sprinkle goat cheese and thyme on top. Season with salt and pepper.
  5. Bake for 20 minutes or until the pastry is golden and crisp.
  6. Let it cool slightly before serving. Enjoy!
