Ingredients

  • 1 cup All-purpose flour
  • ½ cup Cold butter cut into cubes
  • ¼ cup Ice water
  • 2 large Onions thinly sliced
  • 2 tablespoon Olive oil
  • 4 oz Goat cheese crumbled
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine flour and salt. Add cold butter and mix until it resembles coarse crumbs. Gradually add ice water until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Add onions and cook until caramelized, about 15-20 minutes. Season with salt and pepper.
  4. Roll out the dough on a floured surface into a 12-inch circle. Transfer to a baking sheet.
  5. Spread caramelized onions over the dough, leaving a 2-inch border. Sprinkle goat cheese over the onions.
  6. Fold the edges of the dough over the filling, pleating as you go. Bake for 30-35 minutes or until the crust is golden brown.
  7. Let cool slightly before serving.
