- 1 cup All-purpose flour
- ½ cup Cold butter cut into cubes
- ¼ cup Ice water
- 2 large Onions thinly sliced
- 2 tablespoon Olive oil
- 4 oz Goat cheese crumbled
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Preheat your oven to 400°F (200°C).
In a bowl, combine flour and salt. Add cold butter and mix until it resembles coarse crumbs. Gradually add ice water until dough forms. Wrap in plastic and refrigerate for 30 minutes.
In a skillet, heat olive oil over medium heat. Add onions and cook until caramelized, about 15-20 minutes. Season with salt and pepper.
Roll out the dough on a floured surface into a 12-inch circle. Transfer to a baking sheet.
Spread caramelized onions over the dough, leaving a 2-inch border. Sprinkle goat cheese over the onions.
Fold the edges of the dough over the filling, pleating as you go. Bake for 30-35 minutes or until the crust is golden brown.
Let cool slightly before serving.
