Ingredients

  • 1 lb penne pasta
  • 2 cups cherry tomatoes, halved
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup fresh basil, chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  2. 2. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  3. 3. Pour in vegetable broth and heavy cream. Bring to a simmer.
  4. 4. Add penne pasta, salt, and black pepper. Stir well to combine.
  5. 5. Cover and cook for about 15 minutes, stirring occasionally, until pasta is cooked through and liquid is mostly absorbed.
  6. 6. Stir in grated Parmesan cheese and chopped basil. Serve hot.
