Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 large eggs
  • ¼ cup olive oil
  • 1 teaspoon almond extract
  • 1 cup whole almonds, toasted and chopped

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs, olive oil, and almond extract. Add to dry ingredients and mix until combined.
  4. Fold in chopped almonds.
  5. Divide dough in half and shape into two logs on the baking sheet.
  6. Bake for 25 minutes. Remove from oven and let cool for 10 minutes.
  7. Slice logs into ½-inch thick slices. Place slices back on the baking sheet.
  8. Bake for another 15 minutes, until golden and crisp.
