  • 2 cups mashed potatoes
  • 1 egg, beaten
  • ¼ cup flour
  • ¼ cup chopped green onions
  • Salt and pepper to taste
  • 2 tablespoon vegetable oil

Instructions 

  1. Mix mashed potatoes, egg, flour, green onions, salt, and pepper in a bowl.
  2. Heat oil in a skillet over medium heat.
  3. Drop spoonfuls of the potato mixture into the skillet, flattening slightly with a spatula.
  4. Cook until golden brown on both sides, about 3-4 minutes per side.
  5. Remove and drain on paper towels.
