Oatmeal Pancake Trifle Recipe

Pancakes
- 1 cup Oats blended into flour
- 1 cup Milk
- 1 Egg
- 1 teaspoon Baking Powder
- 1 tablespoon Sugar
- 1 teaspoon Vanilla Extract
Trifle Layers
- 2 cups Greek Yogurt
- 2 cups Mixed Berries fresh or frozen
- 2 tablespoon Honey
1. Blend oats into flour.
2. In a mixing bowl, whisk together oat flour, milk, egg, baking powder, sugar, and vanilla extract.
3. Heat a frying pan over medium heat and cook pancakes until golden brown on both sides.
4. Let pancakes cool and cut them into bite-sized pieces.
5. In a trifle dish, layer pancake pieces, Greek yogurt, and mixed berries. Drizzle honey on top.
6. Repeat layers until all ingredients are used up. Serve immediately or chill for later.
