Ingredients 

Main Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 Egg beaten
  • ¼ cup Vegetable oil
  • 1 cup Blueberries fresh or frozen

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, combine the oats and milk. Let stand for 5 minutes.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  4. Add the egg and oil to the oat mixture and mix well.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
