Ingredients

  • 4 sheets nori
  • 2 cups cooked sushi rice
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 4 oz smoked salmon or tofu
  • Soy sauce, for dipping
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions 

  1. Lay a sheet of nori on a flat surface.
  2. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border.
  3. Arrange avocado, cucumber, carrot, and salmon/tofu in a line along the bottom edge.
  4. Roll the nori tightly around the fillings.
  5. Slice into bite-sized pieces and serve with soy sauce, pickled ginger, and wasabi.
