Ingredients 

Main Ingredients

  • 200 g Rice noodles cooked and cooled
  • 1 cup Shredded carrots
  • 1 cup Sliced cucumber
  • ¼ cup Chopped cilantro
  • ¼ cup Chopped peanuts

Dressing

  • 3 tablespoon Soy sauce
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 1 clove Garlic minced
  • 1 teaspoon Grated ginger

Instructions 

  1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  2. In a large mixing bowl, combine the cooked noodles, shredded carrots, sliced cucumber, chopped cilantro, and chopped peanuts.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Serve immediately or refrigerate for up to 2 hours before serving.
