Ingredients

  • 2 cups Green beans trimmed
  • 4 Hard-boiled eggs halved
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber sliced
  • 1 can Tuna drained
  • ¼ cup Black olives
  • ¼ cup Red onion thinly sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper

Instructions 

  1. 1. Boil the green beans for 3-4 minutes until tender-crisp. Drain and cool.
  2. 2. In a large mixing bowl, combine green beans, cherry tomatoes, cucumber, tuna, black olives, and red onion.
  3. 3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss gently to combine.
  5. 5. Arrange the hard-boiled eggs on top of the salad and serve.
