Ingredients 

Main Ingredients

  • 1 cup Wheatberries
  • 2 tablespoon Olive Oil
  • 1 lb Mushrooms, sliced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley, chopped

Instructions 

  1. 1. Cook wheatberries according to package instructions. Drain and set aside.
  2. 2. In a large skillet, heat olive oil over medium heat. Add onions and cook until translucent.
  3. 3. Add garlic and cook for another minute.
  4. 4. Add mushrooms and cook until they release their moisture and start to brown.
  5. 5. Pour in vegetable broth, add salt and pepper. Simmer for 10 minutes.
  6. 6. Stir in cooked wheatberries and parsley. Cook for another 5 minutes.
  7. 7. Serve hot and enjoy!
