Ingredients

  • 8 eggs
  • 1 cup sliced mushrooms
  • 1 cup shredded Swiss cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, whisk the eggs, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Add mushrooms and cook until soft.
  4. Pour the egg mixture over the mushrooms in the skillet. Cook for a few minutes until the edges start to set.
  5. Sprinkle Swiss cheese on top and transfer the skillet to the oven.
  6. Bake for 10-15 minutes, or until the frittata is fully set and golden on top.
  7. Remove from oven, let cool slightly, slice, and serve.
