Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, whisk the eggs, salt, and pepper.
Heat olive oil in a skillet over medium heat. Add mushrooms and cook until soft.
Pour the egg mixture over the mushrooms in the skillet. Cook for a few minutes until the edges start to set.
Sprinkle Swiss cheese on top and transfer the skillet to the oven.
Bake for 10-15 minutes, or until the frittata is fully set and golden on top.
Remove from oven, let cool slightly, slice, and serve.
