Mushroom Swiss Chard Enchiladas

Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 4 cups Swiss chard, chopped
  • 1 cup enchilada sauce
  • 8 pieces corn tortillas
  • 1 cup shredded cheese

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, cook until softened.
  3. Add mushrooms and cook until they release their moisture and start to brown.
  4. Add Swiss chard and cook until wilted. Remove from heat.
  5. Spread a thin layer of enchilada sauce in a baking dish.
  6. Fill each tortilla with the mushroom and chard mixture, roll up and place seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the top and sprinkle with shredded cheese.
  8. Bake for 20-25 minutes, until cheese is melted and bubbly.
  9. Let cool slightly before serving.
