Mushroom Spinach Quesadilla
A quick and easy quesadilla recipe with mushrooms and spinach.

Main Ingredients
- 1 cup Mushrooms sliced
- 1 cup Spinach fresh
- 2 pieces Tortillas
- 1 cup Cheese shredded
- 1 tablespoon Olive Oil
Heat olive oil in a skillet over medium heat.
Add mushrooms and cook until soft.
Add spinach and cook until wilted.
Remove vegetables from skillet and set aside.
Place one tortilla in the skillet, sprinkle half the cheese, add the cooked vegetables, and top with the remaining cheese.
Place the second tortilla on top and cook until the bottom tortilla is golden brown.
Flip the quesadilla and cook until the other side is golden brown and the cheese is melted.
Remove from skillet, cut into wedges, and serve.
