Ingredients

  • 8 eggs
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1 cup shredded cheese (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk the eggs with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add mushrooms and cook until softened.
  4. Add spinach to the skillet and cook until wilted.
  5. Pour the egg mixture into the skillet and cook for a few minutes until the edges start to set.
  6. Sprinkle cheese on top if using. Transfer the skillet to the oven and bake for 10-15 minutes, or until the frittata is fully set.
  7. Remove from oven, let cool slightly, slice, and serve.
