Main Ingredients
- 8 eggs
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- 1 cup shredded cheese (optional)
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk the eggs with salt and pepper.
Heat olive oil in an oven-safe skillet over medium heat. Add mushrooms and cook until softened.
Add spinach to the skillet and cook until wilted.
Pour the egg mixture into the skillet and cook for a few minutes until the edges start to set.
Sprinkle cheese on top if using. Transfer the skillet to the oven and bake for 10-15 minutes, or until the frittata is fully set.
Remove from oven, let cool slightly, slice, and serve.
