Ingredients 

Main Ingredients

  • 12 oz fettuccine
  • 2 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • to taste salt and pepper

Instructions 

  1. 1. Cook the fettuccine according to the package instructions. Drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the mushrooms and cook until they are tender, about 5 minutes.
  3. 3. Add the garlic and cook for another minute.
  4. 4. Add the spinach and cook until wilted, about 2 minutes.
  5. 5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and cook until the sauce has thickened, about 3-5 minutes.
  6. 6. Add the cooked fettuccine to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
  7. 7. Serve immediately, garnished with additional Parmesan cheese if desired.
