  • 500 g Mushrooms sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Heavy Cream
  • 2 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add chopped onion and garlic, sauté until soft.
  3. 3. Add sliced mushrooms and cook until they release their moisture.
  4. 4. Pour in vegetable broth, bring to a boil, then simmer for 15 minutes.
  5. 5. Blend the soup until smooth.
  6. 6. Stir in heavy cream, season with salt and pepper to taste.
  7. 7. Serve hot.
