Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 2 tablespoon Olive oil
  • 1 cup Chopped onions
  • 2 cloves Garlic, minced
  • 8 oz Mushrooms, sliced
  • 4 cups Chicken or vegetable broth kept warm
  • ½ cup Grated Parmesan cheese
  • to taste Salt and pepper
  • 2 tablespoon Butter

Instructions 

  1. 1. Heat the olive oil in a large skillet over medium heat. Add the onions and garlic, and cook until softened.
  2. 2. Add the mushrooms and cook until they release their juices and become tender.
  3. 3. Stir in the Arborio rice and cook for a couple of minutes until the rice is well-coated with the oil.
  4. 4. Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more broth.
  5. 5. Continue this process until the rice is creamy and cooked through, about 20-25 minutes.
  6. 6. Stir in the Parmesan cheese and butter. Season with salt and pepper to taste. Serve hot.
