Instructions
Heat olive oil in a large pan over medium heat.
Add onion and garlic, sauté until soft.
Add mushrooms and thyme, cook until mushrooms are browned.
Pour in vegetable broth, simmer for 10 minutes.
Season with salt and pepper.
Stir in heavy cream if using, cook for another 5 minutes.
