Ingredients

  • 1 sheet Puff Pastry thawed
  • 2 tablespoon Olive Oil
  • 1 lb Mushrooms sliced
  • 2 cloves Garlic minced
  • 1 teaspoon Thyme fresh, chopped
  • 4 oz Goat Cheese crumbled
  • 1 cup Heavy Cream
  • 3 Eggs beaten
  • to taste Salt and Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Roll out the puff pastry and fit it into a tart pan. Prick the bottom with a fork.
  3. Heat olive oil in a pan over medium heat. Add mushrooms and cook until they release their moisture and start to brown.
  4. Add garlic and thyme to the mushrooms. Cook for another 2 minutes.
  5. Spread the mushroom mixture over the puff pastry in the tart pan.
  6. Sprinkle crumbled goat cheese over the mushrooms.
  7. In a mixing bowl, whisk together heavy cream and beaten eggs. Season with salt and pepper.
  8. Pour the cream and egg mixture over the mushrooms and goat cheese in the tart pan.
  9. Bake in the preheated oven for 35-40 minutes, or until the tart is set and golden brown.
  10. Let cool slightly before slicing and serving.
