Mushroom Goat Cheese Ravioli

Dough
- 2 cups All-purpose flour
- 3 units Eggs large
- 1 tablespoon Olive oil
- 1 teaspoon Salt
Filling
- 1 cup Mushrooms finely chopped
- 4 oz Goat cheese softened
- 1 clove Garlic minced
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper freshly ground
1. In a bowl, mix flour and salt. Create a well in the center and add eggs and olive oil. Mix until a dough forms.
2. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
3. In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, cook until mushrooms are soft. Let cool.
4. In a bowl, mix the cooked mushrooms with goat cheese, salt, and pepper.
5. Roll out the dough thinly on a floured surface. Cut into squares using a ravioli cutter.
6. Place a small amount of filling in the center of each square. Brush edges with water, top with another square, and press to seal.
7. Bring a large pot of salted water to a boil. Cook ravioli for 3-4 minutes or until they float. Drain and serve with your favorite sauce.
