- 8 Eggs
- 1 cup Mushrooms, sliced
- ½ cup Goat Cheese, crumbled
- ¼ cup Milk
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the mushrooms and cook until soft, about 5 minutes.
In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
Stir in the cooked mushrooms and crumbled goat cheese.
Pour the mixture into a greased muffin tin, filling each cup about ¾ full.
Bake for 20 minutes, or until the frittatas are set and golden brown.
Let cool slightly before removing from the muffin tin. Serve warm.
