Ingredients

  • 8 Eggs
  • 1 cup Mushrooms, sliced
  • ½ cup Goat Cheese, crumbled
  • ¼ cup Milk
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the mushrooms and cook until soft, about 5 minutes.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  4. Stir in the cooked mushrooms and crumbled goat cheese.
  5. Pour the mixture into a greased muffin tin, filling each cup about ¾ full.
  6. Bake for 20 minutes, or until the frittatas are set and golden brown.
  7. Let cool slightly before removing from the muffin tin. Serve warm.
