Ingredients

  • 2 cups Mushrooms sliced
  • 1 cup Cashews soaked
  • 1 cup Vegetable Broth
  • 1 cup Unsweetened Almond Milk
  • 1 tablespoon Olive Oil
  • 3 cloves Garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 8 oz Pasta Shells

Instructions 

  1. 1. Cook pasta shells according to package instructions. Drain and set aside.
  2. 2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. 3. Add sliced mushrooms to the pan and cook until they release their moisture and become tender.
  4. 4. In a blender, combine soaked cashews, vegetable broth, and almond milk. Blend until smooth.
  5. 5. Pour the cashew mixture into the pan with the mushrooms. Stir well and bring to a simmer.
  6. 6. Season with salt and black pepper. Let the sauce thicken slightly.
  7. 7. Add the cooked pasta shells to the pan and toss to coat them in the sauce.
  8. 8. Serve hot and enjoy!
