Ingredients 

Main Ingredients

  • 1 cup pearl barley
  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 6 cups vegetable broth
  • 4 cups fresh spinach
  • to taste salt and pepper

Instructions 

  1. 1. Rinse the barley under cold water.
  2. 2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  3. 3. Add the minced garlic and sliced mushrooms. Cook until the mushrooms are tender.
  4. 4. Add the rinsed barley and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. 5. Stir in the fresh spinach and cook for another 5 minutes. Season with salt and pepper to taste.
