Mushroom Barley Soup

Main Ingredients
- 1 cup pearl barley
- 8 oz mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Stir in the garlic and cook for another minute.
4. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
5. Add the pearl barley, vegetable broth, dried thyme, salt, and black pepper.
6. Bring to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the barley is tender.
7. Adjust seasoning to taste and serve hot.
