Ingredients 

Main Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped parsley for garnish

Instructions 

  1. 1. Rinse the wild rice under cold water.
  2. 2. In a saucepan, bring the vegetable broth to a boil. Add the wild rice, reduce heat, cover, and simmer for 45 minutes or until the rice is tender.
  3. 3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.
  4. 4. Add the mushrooms and cook until they release their moisture and start to brown, about 8 minutes.
  5. 5. Stir in the garlic, thyme, salt, and pepper. Cook for another 2 minutes.
  6. 6. Add the cooked wild rice to the skillet and mix well. Cook for another 5 minutes, stirring occasionally.
  7. 7. Garnish with chopped parsley before serving.
