Ingredients

  • 1 cup orzo
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1 teaspoon dried thyme
  • 2 cups vegetable broth
  • 1 clove garlic, minced
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large skillet over medium heat.
  2. 2. Add the sliced mushrooms and cook until they are golden brown, about 5 minutes.
  3. 3. Add the minced garlic and dried thyme, cook for another minute.
  4. 4. Stir in the orzo and cook for 2 minutes, stirring frequently.
  5. 5. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer until the orzo is tender and the liquid is absorbed, about 15 minutes.
  6. 6. Season with salt and pepper to taste. Serve warm.
