Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium zucchini, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup dried apricots, chopped
  • ¼ cup fresh cilantro, chopped

Instructions 

  1. Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Stir in the minced garlic, sliced carrots, and chopped zucchini. Cook for another 5 minutes.
  4. Add the chickpeas, diced tomatoes, vegetable broth, and all the spices. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.
  6. Stir in the chopped dried apricots and cook for an additional 5 minutes.
  7. Garnish with fresh cilantro before serving.
