Moroccan Vegetable Tagine
A hearty and flavorful Moroccan vegetable stew.

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium zucchini, chopped
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup dried apricots, chopped
- ¼ cup fresh cilantro, chopped
Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
Add the chopped onion and cook until soft, about 5 minutes.
Stir in the minced garlic, sliced carrots, and chopped zucchini. Cook for another 5 minutes.
Add the chickpeas, diced tomatoes, vegetable broth, and all the spices. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.
Stir in the chopped dried apricots and cook for an additional 5 minutes.
Garnish with fresh cilantro before serving.
