Ingredients

  • 4 oz Bittersweet chocolate chopped
  • ½ cup Unsalted butter cubed
  • 2 large Eggs
  • 2 large Egg yolks
  • ¼ cup Sugar
  • 1 pinch Salt
  • 2 tablespoon All-purpose flour

Instructions 

  1. Preheat oven to 450°F (230°C). Butter and flour four 6-ounce ramekins.
  2. Melt chocolate and butter in a double boiler or microwave, stirring until smooth.
  3. In a mixing bowl, whisk together eggs, egg yolks, sugar, and salt until thickened and pale.
  4. Fold melted chocolate mixture into egg mixture, then fold in flour until just combined.
  5. Divide batter evenly among ramekins. Bake for 12 minutes until edges are set but centers are still soft.
  6. Let cakes cool in ramekins for 1 minute, then invert onto plates. Serve immediately.
