Ingredients 

Main Ingredients

  • 2 tablespoon Miso paste
  • 1 tablespoon Soy sauce
  • 2 tablespoon Olive oil
  • 1 lb Mixed vegetables (carrots, bell peppers, broccoli) cut into bite-sized pieces
  • 1 teaspoon Sesame seeds for garnish

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine miso paste, soy sauce, and olive oil.
  3. Add the mixed vegetables to the bowl and toss to coat them evenly with the miso mixture.
  4. Spread the vegetables out on a baking sheet in a single layer.
  5. Roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and sprinkle with sesame seeds before serving.
